SIA “MOTTRA” was established in 2002 in Latvia. It utilises a closed-recirculating system of its own design, making the process of growing fish and processing it: ecological, sustainable, fish and environmentally.
Technology that is being used, has been designed in the beginning of 1990’s in Astrakhan, capital of Russian caviar production. It has been evolving ever since to keep up with the time and a new methodology. Numerous patents allow SIA “MOTTRA” to have the most sophisticated closed recalculation systems.

SIBERIAN OSETRA - ACIPENSER BAERII
The osetr, usually weigh approximately 65 kg. As with all other sturgeons it is long-lived (up to 60 years) Caviar size ranges from 2 mm to 3 mm. Color ranges from the black to grey. Taste is very light, a true finding for the connoisseur.
STERLET - ACIPENSER RUTHENUS
The sterlet may reach 16 kg in weight. The sterlet is a common Eurasian species of sturgeon. Caviar size ranges from 1,5 mm to 2 mm. Unique grey color that can be found only in 2 types of sturgeons: Beluga and Sterlet. Taste is reach with flavour and a very delicate texture that can only be found in Sterlet
It usually weights approximately 65 kg, with considerable variability between and within river basins. The maximum recorded weight was 210 kg. As with all other sturgeons it is long-lived (up to 60 years), and late to reach sexual maturity. Due to the huge river basins in Siberia, this specie does not require a sea to grow in. This gives a huge advantage to the aquaculture, making it the most common fish that is breed.
The sterlet is a common Eurasian species of sturgeon, one of the smaller species of sturgeon. The sterlet may reach 16 kg in weight and 100 to 125 cm in length. It is quite variable in coloration, but usually has a yellowish ventral side. It is distinguishable between other European species of sturgeons by the presence of a great number of whitish lateral scuttles, and an elongated and narrow snout, variable in length.
